Food Truck Builder in Bismarck, ND

Bismarck and Mandan give a food truck a steady, year-round-minded market: state government workers, a downtown anchored by the historic Depot, the Capitol grounds summer programming, and a brewery scene with Laughing Sun, Dialectic, and Buffalo Commons. The Bismarck Food Truck Festival each September is the marquee date, and Under Brew Skies at the ballpark brings the beer crowd and the trucks together. It is a market that rewards a truck built to keep running when the temperature drops into the teens, which it does for much of the winter.

We build that truck. We design around your menu, source and inspect the vehicle, and prepare the plan review packet for Bismarck-Burleigh Public Health, which licenses food trucks under its Mobile Food Unit 1 and Unit 2 categories and sets the fee after plan review. We build to the FDA Food Code basis in the city’s Title 8 ordinance, plumb the water system to the state standard with a grey water tank at least 15 percent larger than the fresh tank, a three-compartment sink, and a separate handwash sink, and build the cook line to North Dakota’s 2021 fire code Section 319, which means a Type I hood with UL-300 suppression, a Class K extinguisher, and propane under the 200-pound cap with a listed alarm.

Bismarck sits near 1,700 feet with long, hard winters, so we insulate and heat the plumbing and size propane for the cold. If you operate in Mandan, that is a separate jurisdiction with health through Western Plains Public Health and a transient merchant step through the city, and we build to clear both. Most Bismarck builds take about six weeks and run $50,000 to $100,000 depending on size and equipment.

What is included in every Zion build

Every truck and trailer we build comes with the same standard, no matter the city:

  • NSF stainless steel surfaces and a layout designed around your menu and workflow.
  • A Type I hood with UL-rated automatic fire suppression over any cook line that needs it.
  • 1.5 inch insulation through the walls and ceiling, with extra insulation around the plumbing.
  • Plywood cladding for a warmer, tougher, serviceable interior instead of bare metal.
  • All wiring run inside conduit rather than buried in the walls, so it is protected from moisture and easy to service.
  • Water, propane, electrical, and refrigeration sized for what you actually cook.
  • Built to your local health and fire code so you pass inspection the first time, with the base vehicle sourced and inspected by us.
