Food Truck Inspection Requirements in Rock Springs, WY: The 2026 Sweetwater County Guide

Rock Springs sits on I-80 in Sweetwater County, with energy crews, the county fair and a steady flow of travellers. The city has clear mobile vending rules. This guide was rewritten in October 2026 from the city code.

Plan review, handled. Before Sweetwater County Public Health licenses a truck, it wants a plan review: the layout, the equipment list, and the water and wastewater plumbing. We provide the build documentation, plumbing schematics and equipment specs your health department asks for, and we build to pass the inspection the first time. Most of our Wyoming trucks are built at our Denver shop, Mile High Food Trucks; see their Rock Springs food truck builder page and the Wyoming permits guide. Call or text 719-722-2537.

The health license

The state food license under W.S. 35-7-124 is $200 new and $100 a year to renew, runs one year from the date it is issued, and comes from either the Wyoming Department of Agriculture or a local health department. You need one license, not two.

Sweetwater County runs its own food program, so trucks based there license through the county health department. Call it for plan review and fees.

The Rock Springs city permit

Chapter 117 of the city code requires a mobile vending permit and the city occupational tax registration. Apply at least five business days before your first sale, one permit per unit: $25 a month or $100 a year, with annual permits expiring on 31 December and not prorated. You need the food license, vehicle registration and insurance, and general liability insurance if you will operate on public property. Private caterers working private events are exempt.

Where you can and cannot park

On private property you need the owner’s written permission. Public property needs written permission from the Mayor or the Mayor’s designee. On public property in non residential zones you can operate from 6 a.m. to 2 a.m., but within 200 feet of a residential zone you close by 10 p.m. Sunday to Thursday and midnight on Friday and Saturday. Stay 10 feet from hydrants and out of the 40 foot sight triangle at intersections and driveways. Trucks must be self contained with no utility hookups in the right of way.

Fire inspection

The city fire inspector inspects trucks under the vending chapter. Inspectors look for a Type I hood with a UL 300 suppression system serviced every six months, Class K and ABC extinguishers, propane cylinders secured outside the cab with leak tested lines, and a propane alarm.

Sales tax

Sweetwater County’s combined rate is 6 percent, 4 percent state plus two 1 percent county taxes. The current specific purpose tax is expected to end in early 2028.

Where trucks sell in Rock Springs

Sweetwater Events Complex and the county fair, energy and rail crews, I-80 traffic, community events and private catering.

In order

License through Sweetwater County. Apply for the city mobile vending permit at least five business days ahead with your food license and insurance. Pass the city fire inspection. Get written permission for each location.

Common Reasons Food Trucks Fail Rock Springs Inspections

  • Plan review submitted without commissary letter. Sweetwater County Environmental Health doesn’t process incomplete applications.
  • Trying to apply for the city Mobile Vendor Permit electronically. Rock Springs Planning and Zoning explicitly does not accept online applications. In-person or mail only.
  • Wastewater tank undersized. 15 percent rule.
  • Suppression tag past six months.
  • K-Class extinguisher missing or in the wrong location.
  • Food handling permit missing from the city Mobile Vendor application. The city specifically requires the Sweetwater County or Wyoming Department of Agriculture food handling permit attached.
  • General liability insurance missing. Rock Springs requires it for operations on public property.
  • Cold holding equipment can’t make 41°F under load. Especially during summer when desert heat hits 95°F+.
  • Operating without the city Mobile Vendor Permit. Sweetwater County license alone doesn’t cover the city’s separate vendor permit requirement.
