Sheridan has a lively downtown, a summer full of visitors heading for the Bighorns, and the Sheridan WYO Rodeo in July. This guide was rewritten in October 2026 from the city and county’s own pages.
Plan review, handled. Before the Wyoming Department of Agriculture licenses a truck, it wants a plan review: the layout, the equipment list, and the water and wastewater plumbing. We provide the build documentation, plumbing schematics and equipment specs your health department asks for, and we build to pass the inspection the first time. Most of our Wyoming trucks are built at our Denver shop, Mile High Food Trucks; see their Sheridan food truck builder page and the Wyoming permits guide. Call or text 719-722-2537.

The health license
The state food license under W.S. 35-7-124 is $200 new and $100 a year to renew, runs one year from the date it is issued, and comes from either the Wyoming Department of Agriculture or a local health department. You need one license, not two.
Sheridan County does not run its own food program, so trucks based there get the license directly from the Wyoming Department of Agriculture’s Consumer Health Services.
The Sheridan city permit
Sheridan requires a mobile vending permit before your first sale, issued weekly or annually under chapter 8 of the city code. There are categories for a mobile vendor, a neighbourhood mobile vendor and a mobile vending court. Standard permits take 21 days and special event permits 60, so apply early. The fee is set in the city’s master fee schedule; ask the city when you apply.
Fire inspection
Ask the Sheridan Fire Department whether it will inspect your truck when you apply for the city permit. Inspectors look for a Type I hood with a UL 300 suppression system serviced every six months, Class K and ABC extinguishers, propane cylinders secured outside the cab with leak tested lines, and a propane alarm.
Sales tax
Sheridan County’s combined rate is 6 percent, 4 percent state plus two voter approved 1 percent taxes.
Where trucks sell in Sheridan
The Sheridan WYO Rodeo in July, with food vendors under the grandstands and behind the chutes, downtown events, summer visitors, breweries and private catering.
In order
Get the state food license from the Department of Agriculture. Apply for the city mobile vending permit at least 21 days ahead, or 60 for a special event. Register for sales tax.
Common Reasons Food Trucks Fail Sheridan Inspections
- Plan review submitted without commissary letter. CHS won’t process incomplete applications.
- Wastewater tank undersized. 15 percent rule.
- Suppression tag past six months.
- K-Class extinguisher missing or in the wrong location.
- Cold weather propane install inadequate. Sheridan winters are serious. Single small cylinder vaporization fails on cold mornings.
- Operating in residential zones with cooking equipment. The Neighborhood Mobile Vendor category is for ready-to-eat or packaged food only.
- City Mobile Vendor Permit not applied for in time. 21 business day processing time means you need to submit well before your planned start date.
- Cold holding equipment can’t make 41°F under load. Especially during summer ranch wedding catering when the truck is parked in full sun.
- No food handler documentation visible.

Already Have a Truck? We Do the Compliance Work Too
Passing an inspection is one thing, staying current is another. We handle the recurring items out of our Colorado shop:
- LP gas pressure testing, $350. Required annually, and again after any modification.
- Fire suppression inspection and service, $300. The code interval is every 6 months, not annual, which catches a lot of operators out.
- Hood and exhaust cleaning, with the written report and logbook entry inspectors ask to see.
Booked together they are one visit and one day off the road instead of three. Call or text 719-722-2537.
