We build the truck for it. We design around your menu, source and inspect the vehicle, and prepare the state plan review packet for the South Dakota Department of Health, then help you through Aberdeen’s local licensing, which runs through a transient merchant license with day, week, and month rates plus a $1,000 bond rather than a dedicated food truck permit. We build to the state Food Service Code, ARSD 44:02:07, plumb the water system to the state standard with a wastewater tank at least 15 percent larger than the fresh tank, a three-compartment sink, and the Type I hood the state rules require, and build the cook line to the local fire requirements with a UL-300 suppression system, a Class K extinguisher, and propane built to NFPA 58 with a gas alarm.
