A Recent Build for Boulder
A 16ft fancy toast and iced coffee trailer, built for two owners who did not want their business to depend on a commissary kitchen they did not control. So the trailer was built to be one. It has a Type I hood with fire suppression fitted above what the code required, prep, three compartment and hand wash sinks with splash guards, a mop sink, 75 gallons of insulated fresh water against 90 of grey, and a second floor drain. Boulder County Public Health approved it to operate as its own commissary. That approval attaches to this specific unit and equipment list in this county, and your own department makes its own determination, but it shows what the standard looks like when you build to it on purpose.
