We inspect and service food truck fire suppression systems for $300. This is the recurring service that keeps your tag current, and it is the single most common reason a truck gets shut down at an event. This page covers what the code actually requires, how often, and what we check.
The Interval Is Every Six Months, Not Every Year
A lot of operators believe this is an annual service. It is not. NFPA 17A section 8.3.2 requires a service technician, working from the manufacturer’s design, installation and maintenance manual and service bulletins, to service a wet chemical system at intervals of no more than 6 months. NFPA 96 section 12.2.1 says the same thing from the other direction: maintenance by properly trained, qualified and certified persons acceptable to the authority having jurisdiction, at least every 6 months.
Maintenance is also required after any activation. If the system has fired, the six month clock is irrelevant, it needs service before the truck cooks again.
That is the “annual or bi-annual” question answered. The code interval is semiannual. Some operators run it annually because their jurisdiction has not pushed them on it, but the standard the inspector is working from says six months.
There Is Also a Monthly Check, and It Is Yours
This one almost nobody knows about. NFPA 17A section 8.2 puts a monthly inspection on the owner, not the service company. Your own trained staff can do it, it takes a few minutes, and it is what stops a small problem becoming a failed inspection.
What you are checking each month:
- The system is in the armed and ready condition
- Manual actuators are unobstructed
- Tamper indicators and seals are intact
- The maintenance tag or certificate is in place
- No obvious physical damage
- Pressure gauges, where fitted, are in the operable range
- Nozzle blow off caps are in place, intact and undamaged
Nozzle caps are worth singling out. They are cheap, they get knocked off in a busy service, and a missing one lets grease into the nozzle. A blocked nozzle is a system that does not put out the fire it was bought for.
What Our Semiannual Service Covers
Working to NFPA 17A section 8.3 and NFPA 96 section 12.2:
- Every actuation and control component tested for proper operation, which NFPA 96 12.2.2 requires by name: remote manual pull stations, mechanical and electrical devices, detectors and actuators
- Examination of detectors, expellant gas containers, agent containers, releasing devices, piping, hose assemblies, nozzles, signals and auxiliary equipment
- Liquid level check on non pressurized wet chemical containers
- Verification that agent distribution piping is not obstructed
- Verification that the hazard has not changed, which is the item that catches people out, see below
- Detection system, signals and releasing devices tested, including manual stations
- Fixed temperature sensing elements checked and replaced as required
We work from the manufacturer’s manual for your specific system, because NFPA 96 12.2.3 requires the listed system’s own installation and maintenance manual and service bulletins to be followed, not just the general standard.
The Item That Fails Trucks: You Changed the Cook Line
“Verification that the hazard has not changed” sounds like boilerplate. It is the most common way a compliant truck quietly becomes a non compliant one.
Suppression systems are designed around specific appliances in specific positions. Nozzles are selected, aimed and spaced for the appliance underneath them, and the design comes from the system’s UL 300 listing manual. Swap a griddle for a charbroiler, add a second fryer, or slide the range 8 inches to make room, and the nozzles above are now aimed at something they were not designed to protect.
Fryers are the strictest case. You need 16 inches between a fryer and an adjacent surface flame, or a steel or tempered glass baffle of at least 8 inches. In Denver the checklist calls for an 8 inch splashguard plus a metal fryer cover.
If you have changed your equipment since the system was installed, tell us before we come out. It may need a design revision rather than a service, and it is far better to find that out in the shop than at a health inspection.
Fusible Links: Where the Codes Genuinely Disagree
We get asked this constantly, and the honest answer is that the two standards say different things.

This is a real conflict, not a misunderstanding. Because of it we do not tell customers that “the code says annually”, because one of the two codes your inspector may be holding says six months. We replace on the semiannual schedule by default, which satisfies both, and we tell you which rule your jurisdiction is enforcing.
When links are replaced, NFPA 17A 8.3.4.1 requires the replacements to be listed and of the same temperature rating as those removed, unless measured temperatures justify a change.
The Other Dates You Need to Track
- Hydrostatic testing of wet chemical agent cylinders: 12 years, under NFPA 17A section 8.5. This is the date that turns a service into a bigger bill, so it is worth knowing in advance rather than discovering on the day.
- Class K portable extinguisher: 5 year internal examination and 5 year hydrostatic test. Note that this is not the 6 and 12 year schedule people quote from dry chemical extinguishers. Class K is its own schedule and mixing them up is common.

What an Expired Tag Actually Costs You
An out of date tag is not a paperwork problem, it is an operating problem. In Denver, no current suppression inspection or service is on the Fire Department’s list of critical safety spot check violations, alongside no current flammable permit, leaks found in the propane system, and missing hood cleaning documentation. Those are permit revocable items.
The practical version: you get turned away from the event you drove to, on the day, with stock in the fridge. A $300 service booked in advance is a rounding error against one lost weekend.
Mobile Units Have Their Own Rules
Worth knowing, because most published guidance on suppression is written for restaurants and quietly does not apply to you. NFPA 96 has a separate chapter for mobile suppression, Chapter 11, parallel to Chapter 10 for buildings, and a separate Chapter 17 for mobile cooking operations. Most food truck articles cite Chapter 10 and miss both.
Two exemptions in your favor: secondary filtration and pollution control operating requirements do not apply to mobile and temporary cooking operations under 12.1.7.1, and fire damper inspection requirements do not apply under 12.3.1.
One requirement that has no restaurant equivalent: NFPA 96 17.2.3 requires the vehicle to be stabilized when parked so it cannot move, by jacking or by placing wheel chocks around the wheels. Inspectors do check for chocks.
