Licensing a food truck in Golden and Jefferson County
Golden runs a clear path, and it is worth knowing before you build. A mobile unit needs a Colorado retail food license, which for the Golden area starts with Jefferson County Public Health and its Form 3200 mobile food unit plan review. Colorado licenses are reciprocal, so a mobile license issued by any Colorado public health agency is honored across the state, with one exception: the City and County of Denver runs its own separate program. Because Golden is a home-rule city, an operator also needs a Golden sales and use tax license, or a temporary vendor license for a permitted special event. On top of that, the Golden Fire Department requires an annual certificate of inspection, which you can get directly from Golden Fire or carry in from any participating Fire Marshals Association of Colorado jurisdiction. Most operators also line up a commissary agreement for water, waste, and overnight storage, which Jefferson County expects as part of the plan review. Every Zion truck is built to code and sized for real production, not just spec’d to look the part. That means NSF stainless work surfaces, a Type I hood with a UL 300 fire-suppression system where the cook line calls for it, insulated walls and freeze-protected plumbing for year-round Colorado work, properly sized fresh and grey water tanks, electrical sized to the equipment with the right generator or shore-power setup, and a service window built to satisfy the health inspector. We account for Golden’s altitude when we size gas appliances, because a griddle and fryer that lag at 5,675 feet will cost you during a rush.
