A twenty foot sourdough donut trailer delivered to Wyo Donut Company in Casper, Wyoming, built around a proofing cabinet, a flat donut fryer and three times the usual hot water.

A donut kitchen washes more than it fries. Glaze and sourdough dough stick to every tray and bowl, and the three compartment sink gets refilled all morning, so this trailer carries a twenty gallon water heater instead of the usual six to eight, fed from a thirty gallon fresh tank and draining to a forty gallon grey tank. The hand sink is separate with its own hot and cold supply.

The kitchen runs as a line: dough out of the stand mixer, into the proofing cabinet on casters beside it, out onto the table, into the flat donut fryer and across to the window to be glazed and boxed. The fryer sits under a six foot Type 1 hood with wet chemical suppression installed by a licensed company, and an Atosa two door reach in at the back holds sheet pans of shaped dough flat while it retards overnight. The fryer, mixer and proofing cabinet were supplied by the owner and the gas line, hood and outlets were laid out around them.

Two service windows, a six foot by three foot and a five foot with a six foot outdoor shelf, give the owner an order lane and a pickup lane for the hour when a donut business does most of its day. The box has FRP walls and ceiling, a diamond plate floor and the heavier insulation and plywood package for Casper winters, with a rooftop air conditioner with heat, a 125 amp panel with twelve outlets and a Westinghouse 12,500 watt dual fuel generator in a generator box.

Casper is licensed through two agencies: the Casper Natrona County Health Department reviews the plans and inspects the unit, and the Wyoming Department of Agriculture issues the licence. A fully self contained trailer like this one can be licensed without a commissary, which is what lets it work events outside Natrona County.
