A sixteen foot food truck built for Cheyenne Regional Medical Center and its food service partner, Sodexo, in Cheyenne, Wyoming. The customer was a hospital, and the truck was built around a route rather than a menu.

Crav-A-Bowl serves rice, ramen, salad, soup and acai bowls on the hospital campus, at the clinics across town with no cafeteria, and at Cheyenne food truck events. A bowl menu is a batch kitchen, so the line is built around a combi oven that steams rice and roasts proteins, with a thirty six inch griddle and a two burner stove beside it under the hood. A three pan propane steam table holds the hot components at the window and a nine pan proofer and hot box keeps the next batch ready for a shift change.

Bowls are assembled on a thirty six inch refrigerated prep table under the five foot service window, with a full height refrigerator and a freezer at the back and a TV box above the window for the digital menu. Stainless steel walls throughout, aluminum diamond plate floor, LED lighting inside and out, a three compartment sink, a hand sink and a mop sink, thirty gallon fresh and forty gallon waste tanks under the truck, an eight gallon water heater and a Cummins generator sized to run everything at once.

Cheyenne licenses food trucks through three offices: Cheyenne Laramie County Public Health for plan review and the food licence, the City Clerk for the $75 a year food truck licence, and Cheyenne Fire Rescue for the fire inspection the clerk wants to see first. A self contained truck like this one is licensed without a commissary.
