An eighteen foot tempura food trailer delivered to Ten Tempura in Lander, Wyoming, built around three fryers that are deliberately not the same.

Light battered tempura wants a wide, shallow bath where a piece can float and be turned once. Chicken and sweet potato want a deep basket. So the line under the eight foot hood is two Atosa forty pound deep fryers, a twenty four inch radiant charbroiler for the skewers, and a thirty pound flat bottom fryer of the kind a funnel cake stand uses, with wet chemical suppression over all four and a Class K extinguisher for the oil.

A stainless cook wall with FRP on the remaining walls and ceiling, diamond plate floor, a 100 amp panel with twelve outlets, two propane tanks, forty gallon fresh and fifty gallon waste tanks with a water heater and pump, a three compartment sink and a hand sink, an Atosa reach in refrigerator and a matching reach in freezer, and a Cummins 4500 watt inverter generator in a louvred box at the front of the trailer rather than out on the tongue.

Fremont County has no county health department for food, so the trailer is licensed directly by the Wyoming Department of Agriculture: a plan review packet 30 days before construction, a pre opening inspection, and a $200 licence that renews at $100. A self contained unit like this one needs no commissary.
